My personal take on a pickled cucumber salad made at a Korean restaurant where I used to work.


  • 1 large cucumber, sliced thinly
  • 1/4 cup seasoned rice vinegar
  • 1 teaspoon hot pepper sauce
  • 1 teaspoon soy sauce
  • 1/2 teaspoon fish sauce

Combine all ingredients in a bowl. Let sit for at least 20 minutes before serving. Serve as an accompaniment to rice and meat/tofu.
