Because I don’t submit enough healthy recipes. Just so you all know, I don’t only eat cake and fried chicken!

Carrots from umassvegetable.org

:Ingredients:

  • 3 cups grated carrots (NOT shredded)
  • 2 cups chopped celery
  • 1 tbsp finely diced shallot or onion
  • 1 head red-leaf lettuce, finely shredded
  • 1/4 cup Extra Virgin Olive Oil

:Ingredients for dressing:

  • 1/4 cup balsamic vinegar
  • 1 handful chopped basil
  • fresh ground pepper to taste
  • shredded Parmesan cheese to top

Combine all dressing ingredients in a small bowl, except for the cheese. Whisk together and set aside.

Combine salad ingredients in a large bowl, along with EVOO. Toss to combine and coat. As close to serving time as possible, add dressing and toss to coat.

Garnish with Parmesan. Enjoy with enthusiasm!
