One of my favorite really simple breakfast dishes. It does take a little time to bake, but the end result is delicious, and pretty impressive– with minimal effort overall.


(for 1 serving– multiply as necessary)

  • 1 egg
  • .25 cup milk
  • 2 tbsp brown sugar
  • .5 tsp salt
  • .25 tsp ground nutmeg
  • .5 tsp ground cinnamon
  • 1 tbsp melted butter
  • .5 cup cooked white rice
  • .25 cup berries or fresh fruit of choice (optional)

Preheat your oven to 375 degrees Fahrenheit. In a mixing bowl, combine all ingredients, except for the rice. Place the rice at the bottom of a oven-proof bowl and pour the custard mix over the top. Stir the two gently, until all rice is coated. If you wish, at this point add the berries or fruit, and coat with custard as well.  Place dish in oven and bake for 30-45 minutes, until the center of the custard is firm to the touch. Serve with a sprinkle of white sugar over the top, and a pitcher of cream handy to pour over.
